For health reasons I wanted to make low sugar brownies using erythitol. I played with ingredients and the recipe turned out great. I used Lily's stevia chocolate chips on top. (I;m eating them out of the bag as I write this…. YUM!) I used walnuts but my next batch I'm using hazelnuts.
Brownies with walnuts - low sugar
1/2 cup erythritol (I used Swerve)
1/8 cup (2 Tablespoons) coconut sugar
1/4 cup almond flour / meal
1/4 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
3/4 cup unsweetened cocoa
1/4 cup water
1/2 teaspoon instant coffee - optional
1/4 cup light olive oil or other oil
2 eggs
1 cup walnuts chopped
3 Tablespoons Lily's stevia chocolate chips - optional for top
Heat oven to 350º. Mix dry ingredients. Add water, eggs and oil. Mix well. Add walnuts or hazelnuts. Spread in 8 X 8 inch pan. Top with chocolate chips. Place in oven on center rack. Bake for 20 - 25 minutes. Brownies are done when a toothpick comes out clean.
